Plant-based coconut jello in blue, white and red are and easy treat and great way to add decoration to your 4th of July gathering. These are super refreshing, made with only a few ingredients including naturally sweet fresh coconut milk made in the NutraMilk. Enjoy!

INGREDIENTS

For white coconut jello

  • 1 cup coconut milk made with the NutraMilk
  • 2 tsp Agar Agar powder
  • 2 tsp. sugar or sweetener of choice (optional)

For red coconut jello

  • 1 cup coconut milk made with the NutraMilk
  • 2 tsp Agar Agar powder
  • ½ cup red berries
  • 2 tsp. sugar or sweetener of choice (optional)

For blue coconut jello

  • 1 cup coconut milk made with the NutraMilk
  • 2 tsp Agar Agar powder
  • 1 tbsp. blue butterfly pea powder or ½ cup blueberries/blackberries
  • 2 tsp. sugar or sweetener of choice (optional)

For coconut milk (yields 6 cups)

  • 2 cups (160g) of unsweetened dried coconut
  • 1 ½ quarts (6 cups) of water

INSTRUCTIONS

  • Making coconut milk from dehydrated coconut

    • Place the unsweetened dried coconut in the NutraMilk container.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Open the container lid and add 1 cup of water. Replace lid.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Repeat this step for each cup of water, until you have used all 6 cups.
    • Press Mix (do not change the default time)
    • Press Dispense.
    • Press Start and open spigot to fill your storage container.

*you can use more or less water depending on how full-bodied you want the milk to be.

  • Add the agar powder, coconut milk, sugar (optional), blue butterfly pea pea powder or blended blue berries to a pot on the stove. Bring to the boil stirring regularly. Allow to boil for 2 minutes and take out of stove.
  • Pour first blue layer into plastic glasses or container of choice.
  • Place in refrigerator for at least 30 minutes until jello hardens.
  • Continue to making next white layer the same way.
  • For Red layer. Simply blend red berries with a little water and add along with coconut, agar agar and sugar to boil. Refrigerate last layer and it´s ready to serve.

Notes:

For paleo, keto, whole 30 diets: omit sugar or use approved sweetener of choice.
