This mango pudding is made with a fresh cashew cream created in the NutraMilk which gives it the creamy thick pudding consistency. Just five simple ingredients, no need for thickeners, binders, etc. You can make ahead and freeze to have on hand for anytime you need a dessert or sweet treat. Enjoy!

INGREDIENTS

For mousse

Mangos on countertop
  • 2 large mangoes (or 3 medium mangoes)
  • 1 1/2 cup cashew cream
  • 3 tbsp. maple syrup or sweetener of choice

For cashew cream

A clear glass bowl full of cashews
  • 2 cups raw cashews unsalted
  • 6 dates pitted or sweetener of choice (maple syrup, honey, etc)
  • 1 tsp. vanilla extract

INSTRUCTIONS

  • Star by making cashew cream.
    • Place cashews in the NutraMilk. Process for about 5-6 minutes, until you get a butter consistency.
  • Remove the skins from the mangos and chop the mango up and remove the meat from the seed.
  • Place the mango slices into the NutraMilk along with the cashew cream and sweetener. Process until you get a puree consistency.

  • Transfer mousse to serving bowls and refrigerate for one hour or more to set. Garnish with fresh fruit before serving!

Notes: For paleo diet- use an appropriate sweetener such as maple syrup or monk fruit sweetener or skip all together.
