A tasty, creamy and healthy nice cream that is completely plant-based and can fit into many diets such as paleo and whole 30.  Full of healthy nutrients such as vitamins and antioxidants from the berries, potassium from the bananas and zinc & heart-healthy fats from the cashews plus loads of fiber from all three ingredients. Enjoy!

INGREDIENTS

For nice cream

  • 2 ripe bananas, frozen
  • 2 cups frozen blueberries
  • 3 tbsp. cashew nut butter made with the NutraMilk
  • ¼ cup coconut milk or natural plain plant-based yogurt, plus extra as needed
  • Maple syrup (optional)
  • Lemon juice (optional)

For cashew butter

  • 2 cups (300g) cashews
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Making cashew butter
    • Place cashews and salt in the NutraMilk container.
    • Press Butter cycle, set for 5-6 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
    • Set aside 3 tbsp. for this recipes and store the rest for later use.
  • Place the frozen banana slices, frozen berries, and coconut milk or yogurt into the NutraMilk and process until a smooth, creamy ice cream forms.

  • If desired, add a tablespoon of maple syrup and a squeeze of lemon for flavor brightener.

  • Scoop into bowls and serve immediately for a soft serve nice cream or freeze for a few hours for a firmer consistency. Enjoy!
