A deliciously creamy and sweet gingerbread latte made with fresh homemade oat milk, molasses and plenty of warming, flavorful spices – Its one of our favorite holiday drinks! Give it a try!
INGREDIENTS
- 1 cup oat milk or other plant-based milk made with the NutraMilk*
- 1 or 2 shots of espresso coffee
- 1 tbsp. peanut butter made with the NutraMilk
- 1 tsp. fancy molasses
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 1/2 tsp. vanilla
For oat milk (yields 1 quart /4 cups / 946 mL)
- 1 cup (107g) oats
- 1 quart (946ml) water
- pinch of Pink Himalayan salt (optional)
For peanut butter
- 2 cups (275g) peanuts (untoasted, unsalted)
- pinch salt (optional)
INSTRUCTIONS
- Start by making fresh oat milk with the NutraMilk:
- Allow oats to soak for 30 minutes to 1 hour before preparing your oat milk.
- Drain oats.
- Place oats and salt in NutraMilk container.
- Press Butter cycle, set for I minute.
- Press Start.
- Open the container lid, add the water. Replace lid.
- Press Mix (do not change this default time).
- Press Start.
- Press Dispense and open spigot to fill your storage container.
- Next, make the peanut butter
- Place peanuts in the NutraMilk container.
- Press Butter cycle, set for 2-3 minutes.
- Press Start.
- Open the container lid.
- If necessary, set for an additional 1-2 minutes for a creamier butter.
- Brew coffee, add to a small jug and set aside.
- In a small pot add the rest of the creamer ingredients and heat until steamy but not boiling.
- Using a strainer, strain milk mixture into coffee mug.
- Add any additional sweetener of choice to taste.
- Garnish with coconut, cashew or regular whipped cream and sprinkle with cinnamon (optional).
Notes: *For paleo & Keto recipes choose nut milk such as almond, cashew milk, etc instead of oat milk.
