Homemade chocolate cups filled with fresh cashew butter! Simple yet delicious!!!

Decorate them with some natural orange coloring for March Madness. Enjoy!

INGREDIENTS

For chocolate cups

  • 2 cups dairy-free chocolate (I used a mix different chocolates)
  • 2 tsp. coconut oil

For the filling:

  • Cashew butter made with the NutraMilk (about 1/3 cup)

For cashew butter

  • 2 cups (300g) cashews
  • 1/8 teaspoon Pink Himalayan salt (optional)

For natural orange icing

  • 1 cup powdered sugar
  • ½ tsp. beet powder
  • ½ tsp. turmeric powder
  • 2-4 tbsp. of plant-based milk

INSTRUCTIONS

  • Making cashew butter
    • Place cashews and salt in the NutraMilk container.
    • Press Butter cycle, set for 2-4 minutes.
    • Press Start.
    • Open the container lid.
    • For this recipe you don’t want very creamy butter, so keep an eye out and don’t over process. This way the filling will stay firm in the middle.
    • Set aside 1/3 cup for recipe filling and store the rest for later use.
  • Line mini muffin pan with paper liners, set aside.
  • Melt chocolate chips and coconut oil in microwave for 15 seconds at a time, about 1 minute total, stirring in between until chips have completely melted. (You can also melt in a small saucepan on stove over low heat, or a double boiler.
  • Scoop about 1 tablespoon of melted chocolate into muffin liners. Transfer pan to freezer and allow chocolate to set for 5 minutes.

  • Once chocolate is set, scoop about 2 teaspoons or a bit more of cashew butter in center of chocolate.
  • Then add about 2 tablespoons of melted chocolate over cashew or enough to cover filling. Transfer pan back to freezer until set.

  • Meanwhile make orange icing:
    • Whisk together sugar and milk (one tablespoon at a time) until icing starts to form. Add more milk dending on consistency you prefer.
    • In a separate small bowl, add beet & turmeric powder with a tbsp. of water and mix. Add more of either powder till you get the orange color you desire.
    • Add color mixture to the icing and mix until well combined.

  • Take chocolates out of freezer and decorate with icing using a piping bag or a ziplock bag, making lines represent basketballs. Enjoy!
