Vegan tacos for any lunch or dinner! You can use any ingredients you like to fill your tacos - below is a sample recipe but you can also add tofu, avocado, etc. The secret to these delicious savory tacos is the Thai peanut sauce made with nutritious fresh peanut butter made in the NutraMilk. Enjoy!

INSTRUCTIONS

For peanut sauce

  • ½ cup peanut butter made in the NutraMilk
  • ¼ cup reduced sodium tamari (gluten free if needed or reduced-sodium soy sauce)
  • 3 tbsp. seasoned rice vinegar
  • 3 tbsp. water
  • 2 tbsp. agave nectar or maple syrup
  • 1 tsp. grated fresh ginger
  • 2 cloves garlic pressed or very finely minced
  • 1 tsp. Sriracha or more to taste

For Tacos

  • Flour or corn tortillas
  • 1 15 ounces can chickpeas, drained and rinsed
  • 2 cups red cabbage, thinly sliced
  • 2 tomatoes of choice, sliced or diced
  • 1 zucchini, sliced or any other Green of choice
  • jalapeños
  • Lime
  • Cilantro (optional)

For peanut butter

  • 2 cups (275g) peanuts (untoasted, unsalted)
  • pinch salt (optional)

INSTRUCTIONS

  • Making the peanut butter
    • Place peanuts in the NutraMilk container.
    • Press Butter cycle, set for 2-3 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
  • For peanut sauce: Mix all sauce ingredients in a bowl until well combined.

  • Toast tortillas in a pan on the stove or in the oven.
  • Add all taco ingredients to tortilla as desired and drizzle a generous amount of peanut sauce. Enjoy!
