This quick, easy and balanced meal is made in one pot with little preparation. Probably one of the fastest plant-based curries you can make!
Made with healthy whole ingredients: quinoa, lentils, butternut squash and fresh coconut milk made with the NutraMilk- this meal is loaded with fiber, complete protein from the combination of quinoa and lentils, vitamins, minerals from all these ingredients. A healthy meal no doubt! But also equally important is that it is delicious, full of flavor thanks to the fresh coconut milk (you can make ahead and have frozen) and curry spices. Enjoy!
INGREDIENTS
- 2 cups small diced sweet potato or butternut squash
- 1 cup quinoa, rinsed
- 1 cup brown lentils, ideally previously soaked 8 or more hours
- 1/2 yellow onion, finely diced
- 5 cups light coconut milk made with the NutraMilk
- 2 cups vegetable broth
- 2 tsp. curry powder
- 1 1/2 tsp. salt
- 1 tsp. ground ginger
- 1 tsp. ground coriander
- 1 tsp. granulated garlic
- 1/2 tsp. black pepper
- Optional garnish: chopped cashews, fresh cilantro
For coconut milk from dehydrated coconut (yields 6 cups)
- 2 cups (160g) of unsweetened dried coconut
- 1 ½ quarts (6 cups) of water
INSTRUCTIONS
- First, start by making coconut milk from dehydrated coconut
- Place the unsweetened dried coconut in the NutraMilk container.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Open the container lid and add 1 cup of water. Replace lid.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Repeat this step for each cup of water, until you have used all 6 cups.
- Press Mix (do not change the default time)
- Press Dispense.
- Press Start and open spigot to fill your storage container.
*you can use more or less water depending on how full-bodied you want the milk to be.
- Add all ingredients to a large pot and stir until combined. Bring mixture to a boil, reduce to a simmer and simmer covered until liquid has absorbed and quinoa, lentils and butternut squash or sweet potato are cooked through, 50-60 minutes.
- You will want to uncover the pot and give it a good stir every so often to make sure nothing is sticking to the bottom and that there is enough liquid. If for some reason you run out of liquid, you can add in a little bit more broth, or water.
- Garnish with chopped cashews and fresh cilantro, if desired.
