If you like chia pudding, you´ll love this the frozen version – chia popsicles. They are nourishing, filling and refreshing. Perfect for hot days, a midday snack, especially for a pool snack. They are vegan and easily adapted for paleo and keto diets by substituting the sweetener. Choose your favorite plant-based milk made with the NutraMilk and your favorite fruit to make similar chia popsicles. Enjoy!

INGREDIENTS

For popsicles

  • 1 cup canned unsweetened coconut milk, well shaken
  • 1 cup almond or other dairy-free milk made with the NutraMilk
  • ¼ cup chia seeds
  • ½ Tablespoon agave syrup or sweetener of choice (monk fruit sweetener for paleo)
  • 3 kiwi fruits peeled and sliced

For almond milk

  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Start by making fresh almond milk with the NutraMilk:
    • Place almonds in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with almond milk.
  • Stir together coconut milk, almond milk, chia seeds, and sweetener. If desired, add additional sweetened to taste.

  • Place sliced kiwis in popsicle molds to your liking. Gently pour liquid mixture into popsicle molds. Insert wooden popsicle stick.

  • Freeze for at least 4 hours until popsicles are solid. Enjoy!
