If you like chia pudding, you´ll love this the frozen version – chia popsicles. They are nourishing, filling and refreshing. Perfect for hot days, a midday snack, especially for a pool snack. They are vegan and easily adapted for paleo and keto diets by substituting the sweetener. Choose your favorite plant-based milk made with the NutraMilk and your favorite fruit to make similar chia popsicles. Enjoy!
INGREDIENTS
For popsicles
- 1 cup canned unsweetened coconut milk, well shaken
- 1 cup almond or other dairy-free milk made with the NutraMilk
- ¼ cup chia seeds
- ½ Tablespoon agave syrup or sweetener of choice (monk fruit sweetener for paleo)
- 3 kiwi fruits peeled and sliced
For almond milk
- 1 cup (150g) almonds
- 1 quart (946ml) water
- 1/8 teaspoon Pink Himalayan salt (optional)
INSTRUCTIONS
- Start by making fresh almond milk with the NutraMilk:
- Place almonds in the NutraMilk container.
- Press Butter cycle, set for 7 minutes.
- Press Start.
- Add water and replace lid.
- Press Mix (do not change the default Mix time).
- Press Start.
- Press Dispense, open spigot and fill your container with almond milk.
- Stir together coconut milk, almond milk, chia seeds, and sweetener. If desired, add additional sweetened to taste.
- Place sliced kiwis in popsicle molds to your liking. Gently pour liquid mixture into popsicle molds. Insert wooden popsicle stick.
- Freeze for at least 4 hours until popsicles are solid. Enjoy!
