If you like Starbucks´s Caramel Mocha Frappuccino, you´ll love this recipe. It´s basically a homemade version of the same thing. Made with fresh plant-based milk in the NutraMilk and using almond cashew milk we have made a deliciously sweet caramel sauce. Enjoy
INGREDIENTS
For Frappuccino
- 2 shots espresso (or 1/3 cup of strong black coffee)
- 3/4 cup cold plant-based milk made with the NutraMilk (I used almond-cashew milk)
- 2 cups ice
- 2 tbsp. sugar (optional)
- 3 tbsp. caramel sauce made with the NutraMilk
- whipped cream
For caramel sauce
- 2 cups almond cashew milk made with the NutraMilk
- 1/2 cup brown sugar
- 1/8 tsp. vanilla essence
- 1/8 tsp. baking soda
For almond cashew milk
- 1/2 cup (75g) almonds
- ½ cup (75g) cashews
- 1 quart (946ml) water
- 1/8 teaspoon Pink Himalayan salt (optional)
INSTRUCTIONS
For almond cashew Milk
- Start by making fresh almond cashew milk with the NutraMilk:
- Place almonds and cashews in the NutraMilk container.
- Press Butter cycle, set for 7 minutes.
- Press Start.
- Open the container lid, add water and replace lid.
- Press Mix (do not change the default Mix time).
- Press Start.
- Press Dispense.
- Press Start and open spigot to fill your storage container.
For caramel sauce
- Place almond milk in a medium sauce-pan and bring to a boil. Gradually add sugar while stirring with a wooden spoon, you will notice that it will immediately change color.
- Reduce heat and simmer uncovered, stirring occasionally (to avoid burning and sticking to the bottom) until the consistency changes.
- It will take about 30 minutes or for caramel sauce to have a good consistency to be able to drizzle.
- Place caramel sauce in a clean container and store in the refrigerator for up to 3 weeks.
For Frappuccino
- Place the espresso, almond cashew milk, ice, sugar and 2 tbsp. of the caramel sauce into the NutraMilk or use a hand blender.
- Blend until smooth.
- Pour out into a glass and top with whipped cream.
- Finish off by drizzling with the remaining tablespoon of caramel sauce. Enjoy!
