This coconut smoothie made with fresh coconut milk created in the NutraMilk, banana and yogurt is ideal for a refreshing poolside beverage.
It will keep you cool and hydrate you plus give you some energy and nutrients to keep you satisfied until mealtime. Enjoy!
INGREDIENTS
For smoothie
- 1 medium banana, preferably frozen
- 1 cup ice or frozen coconut milk ice cubes
- 1 cup coconut milk made in the NutraMilk
- 1/2 cup plain Greek yogurt or coconut yogurt
- 3 tbsp. unsweetened flake coconut
- 2 tsp. monk fruit sweetener or sweetener of choice
- 1/8 teaspoon coconut extract (optional)
For Coconut Milk (yields 6 cups)
- 2 cups (160g) of unsweetened dried coconut
- 1 ½ quarts (6 cups) of water
INSTRUCTIONS
- Making coconut milk from dehydrated coconut
- Place the unsweetened dried coconut in the NutraMilk container.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Open the container lid and add 1 cup of water. Replace lid.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Repeat this step for each cup of water, until you have used all 6 cups.
- Press Mix (do not change the default time)
- Press Dispense.
- Press Start and open spigot to fill your storage container.
*you can use more or less water depending on how full-bodied you want the milk to be.
- To the NutraMilk smoothie bowl, add the banana, ice, coconut milk, yogurt, coconut, sweetener (and extract, if using).
- Process the ingredients until completely incorporated and smooth.
- Pour into a glass, top with coconut flakes and enjoy right away while cold.
