Peanut Butter Non-Dairy Brownies

Indulge with these nutrient and energy dense brownies. They are super easy to make with the NutraMilk- no baking required! They are free of refined sugar, full of plant protein, fiber, and healthy nutrients. You can store in an airtight container in the refrigerator up to 1 week, or in the freezer up to 1 month.

INGREDIENTS

For peanut butter

• 2 cups (275g) peanuts (untoasted, unsalted)
• pinch salt (optional)

For brownies

• 3/4 cup walnuts
• 1/2 cup raw almonds
• 1/4 cup hazelnuts
• 2 cups Medjool dates, pitted
• 1/2 cup unsweetened cocoa powder
• 1/2 cup natural peanut butter, divided (made with the NutaMilk)
• 1/4 teaspoon salt
• 2 tablespoons cacao nibs or chopped chocolate bar

INSTRUCTIONS

• Making the peanut butter
• Place peanuts in the NutraMilk container.
• Press Butter cycle, set for 2-3 minutes.
• Press Start.
• Open the container lid.
• Take out peanut butter-set ½ cup aside for this recipes and store the rest for later use.
• Line an 8x8-inch square pan with parchment paper. Set aside.
• Place walnuts, almonds, hazelnuts and dates in the NutraMilk. Press butter until almost paste-like. Add cocoa powder, 1/3 cup of the peanut butter, and salt. Press butter until well combined.
• Turn mixture out into prepared baking pan. Use your fingers or the back of a measuring cup to firmly press into pan, working into all edges until smooth. Refrigerate for 1 hour.
• Place remaining peanut butter in a small microwave-safe bowl. Heat for 20 seconds, until softened. Spread peanut butter evenly over brownies and sprinkle with cacao nibs. Refrigerate again for 10 minutes. Slice brownies into 8 squares or more depending on the size you prefer.
