INGREDIENTS
For Sunflower butter
- 2 cups roasted sunflower seeds (270g)
- 1/8 tsp. salt (optional)
For bottom layer
- 2 tbsp. coconut oil, melted
- 1/4 cup sunflower butter made with the NutraMilk
- 1/4 cup unsweetened cocoa powder
- 1 tsp. vanilla extract
- 1 tbsp. monk fruit sweetener or other Keto-approved sweetener
For top layer
- 2 tbsp. coconut oil, melted
- 1/4 cup sunflower butter made with the NutraMilk
- 1/2 tsp. vanilla extract
INSTRUCTIONS
- Making sunflower butter
- Place sunflower seeds and salt in the NutraMilk container.
- Press Butter cycle, set for 8-9 minutes.
- Press Start.
- Open the container lid.
- If necessary, set for an additional 2-3 minutes for a creamier butter.
- Line a mini muffin tray with 6 cupcake lines.
- Combine all ingredients for the bottom layer in a large bowl and mix until smooth.
- Fill the 6 muffin lines equally with the sunflower butter mixture.
- Put the tray in the freezer on a flat surface and freeze until solid (about 15 minutes).
- Meanwhile, mix all ingredients together for the top layer until smooth.
- Pour evenly over the set chocolate mixture.
- Return cups to the freezer until solid (about 10 minutes).
- Keep them in the freezer until you are ready to enjoy them!
