These are a real treat! When you are craving churros- try these easy to make churro bites- They are baked instead of fried, gluten-free and can be easily made vegan. Dipped in this sweet nutty chocolaty dip- they are irresistible!
INSTRUCTIONS
For churro dough
- 3/4 cup gluten-free flour
- 1/4 tsp. salt (if using unsalted butter)
- 1 tbsp. sugar
- 3/4 cup plant-based milk made with the NutraMilk (I used cashew milk)
- 5 tbsp. unsalted butter/vegan butter
- 1¼ tsp. vanilla extract
- 1 large egg or substitute or vegan egg replacer
For cinnamon sugar coating
- ⅓ cup sugar
- 1 tsp. cinnamon
For chocolate sauce
- 1/3 cup white chocolate chips or chopped chocolate bar (vegan opt. if necessary)
- 1/4 cup peanut butter made with the NutraMilk
For cashew milk
- 1 cup (150g) cashews
- 1/8 teaspoon pink himalayan salt (optional)
For peanut butter
- 2 cups (275g) peanuts (untoasted, unsalted)
- pinch salt (optional)
INSTRUCTIONS
For cashew Milk
- Start by making fresh cashew milk with the NutraMilk:
- Place cashews in the NutraMilk container.
- Press Butter cycle, set for 3 minutes.
- Press Start.
- Open the container lid, add water and replace lid.
- Press Mix (do not change the default Mix time).
- Press Start.
- Press Dispense.
- Press Start and open spigot to fill your storage container.
- Making the peanut butter
- Place peanuts in the NutraMilk container.
- Press Butter cycle, set for 2-3 minutes.
- Press Start.
- Open the container lid.
- If necessary, set for an additional 1-2 minutes for a creamier butter.
- Preheat your oven to 400°F.
- Add your flour, salt and sugar in a separate bowl and set aside.
- Place your water, milk, butter and vanilla in small sauce pan and bring to a boil. Grab a wooden spoon in the meantime.
- Once boiling, add your flour mixture and stir with the spoon until mixture comes together in a ball. This should only take 10 seconds or so. Do not over mix!
- Turn OFF heat and add your egg. Mix quickly until egg is combined with the dough. Set aside.
- Once dough has slightly cooled- place in round silicone mold or whatever mold you have at home.
- Bake on an upper rack in your oven for about 15 minutes or until inside is JUST cooked through.
- While baking, combine your cinnamon and sugar in a large bowl.
- Toss in your churros right when they come out of the oven! The sugar will not stick if you wait too long.
- To make chocolate dipping sauce-melt chocolate in microwave or over double boiler and mix in peanut butter.
- Serve with chocolate sauce on the side. Enjoy!
