This could be your kid´s next favorite snack or dessert! It tastes similar to cookie dough but its completely different and actually healthy. Its made with a few simple ingredients and provides a good amount of protein, fiber, and other healthful nutrients. Its gluten-free, dairy-free, vegan and naturally sweetened. Serve it with apples, strawberries, or bananas to get more fruit in your diet. Enjoy!

INGREDIENTS

For almond milk

  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

For peanut butter

  • 2 cups (275g) peanuts (untoasted, unsalted)
  • pinch salt (optional)

For dessert hummus

  • 1 cup chickpeas, canned or cooked
  • 1/2 cup peanut butter made with the NutraMilk
  • ¼ cup or more almond milk or other plant-based milk made with the NutraMilk
  • 1 banana (optional)
  • 1 tbsp. coconut sugar or other sweetener of choice (optional)
  • 2 tsp coconut oil
  • 1/2 tsp vanilla
  • 1/8 tsp cinnamon
  • A pinch of sea salt
  • 1/3 cup vegan sugar-free chocolate chips

Optional toppings

  • ½ -1 banana
  • 1 tbsp. coconut oil
  • Small handful chocolate chips to top

INSTRUCTIONS

For almond Milk

  • Start by making fresh almond milk with the NutraMilk:
    • Place almonds in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot, and fill your container with almond milk.
    • Set aside ¼ cup or a bit more for the recipe and store the rest for later use.
  • Making the peanut butter
    • Place peanuts in the NutraMilk container.
    • Press Butter cycle, set for 2-3 minutes.
    • Press Start.
    • Open the container lid.
    • Leave ½ cup of peanut butter in the NutraMilk and store the rest for later use.
  • Place all ingredients in the NutraMilk along with peanut butter and press ¨Mix¨ until all ingredients are well-combined, creamy and smooth. Taste and adjust with more sweetener or any other ingredients you desire.
  • *you can add a ripe banana for natural sweetness and plus because banana and peanut butter pair so well. You can skip the sweetener if you are looking for a low sugar treat or use both.
  • Take out and stir in the chocolate chips.
  • Optional topping: Fried bananas are delicious with this dessert dip. You simply heat coconut oil in a small skillet and cook sliced bananas until golden (just a few minutes). Flip banana slices and cook till golden on this side as well. Enjoy!
