This is not your traditional savory hummus made with tahini. It´s dessert hummus! You can get pretty creative with different ingredients to make a sweet dessert hummus to enjoy as a dessert, snack, or even breakfast. This recipe resembles some of our vegan cheesecake recipes. It´s made with fresh cashew butter and coconut milk made with the NutraMilk. It's creamy, flavorful, and packed with protein, fiber, heart-healthy fats as well as vitamins and minerals for optimal nutrition. Enjoy!
INGREDIENTS
For coconut milk (yields 6 cups)
- 2 cups (160g) of unsweetened dried coconut
- 1 ½ quarts (6 cups) of water
For cashew butter
- 2 cups (300g) cashews
- 1/8 tsp Pink Himalayan salt (optional)
For dessert hummus
- 1 1/2 cups chickpeas, canned or cooked
- 1/3-1/2 cup maple syrup, honey, or sweetener of choice.
- 1/2 cup coconut milk (or more to reach desired consistency) made with the NutraMilk
- 1 tbsp. lemon juice
- 1 tbsp. pure vanilla extract
- 1/4 tsp sea salt
- 1/2 cup cashew butter made with the NutraMilk
INSTRUCTIONS
- Making coconut milk from dehydrated coconut
- Place the unsweetened dried coconut in the NutraMilk container.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Open the container lid and add 1 cup of water. Replace lid.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Repeat this step for each cup of water, until you have used all 6 cups.
- Press Mix (do not change the default time)
- Press Dispense.
- Press Start and open spigot to fill your storage container. Set aside 1/2 cup or more for this recipe and store the rest for later use.
- *you can use more or less water depending on how full-bodied you want the milk to be.

Making cashew butter
- Place cashews and salt in the NutraMilk container.
- Press Butter cycle, set for 5-6 minutes.
- Press Start.
- Open the container lid.
- If necessary, set for an additional 1-2 minutes for a creamier butter.
- Leave ½ cup of cashew butter in the NutraMilk and store the rest for later use.
- Add the rest of the ingredients to the NutraMilk along with the cashew butter and press ¨Mix¨ until well combined and smooth, adding more coconut milk to reach desired consistency.
- Top with crushed cashews, coconut flakes, syrup of choice. Enjoy with fresh fruit, crackers, toasts, pretzel or by the spoonful!
