This delicious plant-based ¨chicken salad¨ makes a delicious filling for sandwiches, wraps, or as a side dish to any lunch, picnic or BBQ.
Easy and quick to make, which we always love. Its super creamy thanks to the plant-based cashew mayonnaise dressing made in the NutraMilk. This mayo has no oil, basically just cashews, lemon, apple cider and water- its so tasty and full of healthy nutrients from the cashews. Enjoy!
INGREDIENTS
For sandwich
- 15 ounce can chickpeas, drained and rinsed
- 2 celery ribs, diced small
- 1 pink lady apple, finely diced
- 1/4 cup red onion, finely diced
- 1/2 cup vegan mayo dressing made with the NutraMilk
- 1 tablespoon lemon juice, from about 1/2 lemon
- salt and pepper to taste
- lettuce
- croissant or bread of choice
For vegan mayo dressing
- 1 cup cashews
- 1 tbsp. apple cider vinegar
- 1 tbsp. lemon juice
- salt and pepper to taste
- 3/4 cup water or more
INSTRUCTIONS
- Prepare mayo dressing:
- Add cashews to the NutraMilk and process for about 5 to 7 minutes, until you get a cashew butter consistency.
- Add the rest on the ingredients and process for a few seconds until well combined. Add half or the water at first, see if you like the consistency. Add more water progressively for a thinner consistency.
- Drain the cans of chickpeas and roughly smash the chickpeas with a fork or your fingers.
- Finely chop the apple, celery, and onion.
- Add all ingredients in a bowl and toss until everything is mixed and coated with mayo dressing.
- Prepare sandwiches as you desire. Enjoy!
