INGREDIENTS
For bruschetta
- 1 crispy baguette, cit into ½ inch slices
- 8 fresh figs, cut into small wedges
- Fresh sprigs of rosemary or thyme
- 1 cup savory cashew butter
- Thick Balsamic vinegar to drizzle
For savory cashew butter
- 2 cups raw cashews (soaked overnight- optional)*
- 2 tbsp. nutritional yeast
- 1 tsp. roasted garlic (optional)
- 1/2 tbsp. fine sea salt (or to taste)
- 1/2 tsp freshly cracked black pepper (or to taste)
INSTRUCTIONS
- Prepare savory cashew butter
- Assemble bruschetta
- Spread a generous amount of savory cashew butter on each slice of bread. Place a few fig wedges on top. Drizzle balsamic vinegar and top with herb of choice. Enjoy!
