INGREDIENTS
Cashew Milk Egg Nog Recipe
- 2 cups cashews
- 4 tbsp maple syrup
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp vanilla
- Pinch of cardamom & sea salt
- Sprinkle of turmeric for color
Cheesecakes Base:
- ½ cup pecans
- ¼ cup coconut flour
- ¼ cup dates
- 2 tbsp melted coconut oil
- 1 tsp cinnamon
- Pinch of sea salt
Filling
- 2 cups soaked cashews
- ½ cup home made cashew milk egg nog
- ¼ cup melted coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla
- ½ tsp cinnamon
- 1 tbsp Apple cider vinegar or lemon juice
DIRECTIONS
- Step 1. Add cashews to Nutramilk and follow directions to make cashew milk.
- Step 2. Once the milk is finished, empty into a glass container and add the remaining ingredients. Give it a good mix and set aside.
- Step 3. Place all base ingredients in a food processor until a dough forms. Press into the bottom of a lined baking dish or cupcake liners.
- Step 4. Add the filling ingredients to the food processor and process until completely smooth, scraping down the sides as necessary.
- Step 5. Divide the filling amonst the cupcake liners or disperse evenly over the base in a baking pan.
- Step 6. Place in the freezer to set, 2 hours-overnight. Enjoy!
