Homemade maca coffee energy bars on a white tray

These copy cat Thunderbird bars taste just like the store-bough version. They are quick to put together with delicious, whole and nutritious ingredients for the perfect energy bar to take anywhere.

INGREDIENTS

For bars

  • 1 heaping cup of medjool dates, pitted
  • ½ cup raw or dry roasted, unsalted almonds
  • ½ cup raw cashews
  • ¼ heaping cup cacao butter
  • 3/4 cup hazelnut butter made with the NutraMilk
  • 1 tbsp. chia seeds
  • 2 tbsp. unsweetened cocoa powder
  • ¼ tsp sea salt
  • ½ tsp vanilla bean powder
  • 1 tbsp. maca powder
  • 1 ½ tbsp. instant coffee

For hazelnut butter

  • 2 cups raw hazelnuts (270 g)
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Start by making hazelnut butter
    • Place hazelnuts and salt in the NutraMilk container.
    • Press Butter cycle, set for 15-16 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
  • Put nut and dates in the NutraMilk and process until mostly combined. Add the remaining ingredients and process until a clumpy texture starts to form. Remove mixture from the NutraMilk and place on a piece of parchment paper.

  • Form in the mixture into a long rectangle and slice into 8 bars or slice once more into squares. Place in the freezer for 20 minutes or in the refrigerator for an hour to let them set. Store in the fridge.
