Here is one version of vegan "pulled pork." It's obviously quite different nutritionally, but the texture is similar and so is the look plus this creamy peanut sauce makes this vegan "pulled pork" just mouth-watering. Love it! It's filled with healthy veggies and nourishing coconut milk and peanut butter freshly made in the NutraMilk. Aside from making sandwiches you can make tacos, or serve over rice, cauliflower rice, etc. Swap the small quantity of sugar for stevia or other keto-approved sweetener and make this recipe paleo, whole 30 and keto friendly. INGREDIENTS

For Filling

  • 1 can of hearts of palm in water
  • 2 cups white cabbage, shredded
  • 1 medium white onion, thinly sliced

For the peanut sauce:

  • 1/2 cup vegetable broth
  • 1/2 cup coconut milk made with the NutraMilk
  • 2 tbsp. soy sauce or coconut aminos
  • 1 tbsp. fresh lime juice
  • 2 tbsp. brown sugar or other sweetener of choice
  • 1/2 cup creamy peanut butter made with the NutraMilk
  • 1/4 tsp. cayenne pepper

To serve

  • burger buns (GF option if needed)
  • lettuce
  • red cabbage, shredded
  • any other ingredients of choice

For peanut butter

  • 2 cups (275g) peanuts (untoasted, unsalted)
  • pinch salt (optional)

For coconut milk from dehydrated coconut (yields 6 cups)

  • 2 cups (160g) of unsweetened dried coconut
  • 1 ½ quarts (6 cups) of water

INSTRUCTIONS

  • First, start by making coconut milk and peanut butter for sauce if you don’t have a batch already made:
    • Making coconut milk:
    • Place the unsweetened dried coconut in the NutraMilk container.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Open the container lid and add 1 cup of water. Replace lid.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Repeat this step for each cup of water, until you have used all 6 cups.
    • Press Mix (do not change the default time)
    • Press Dispense.
    • Press Start and open spigot to fill your storage container.

*you can use more or less water depending on how full-bodied you want the milk to be.

    • Making the peanut butter:
    • Place peanuts in the NutraMilk container.
    • Press Butter cycle, set for 2-3 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.

  • Add all sauce ingredients to a bowl and whisk until smooth.
  • Drain the water from the hearts of palm cans. Remove and roughly chop.
  • Add the chopped hearts of palm, onions and shredded cabbage to a large skillet and sauté until the onions have started to caramelize, about 7 - 8 minutes (you could use oil or water here). Add the peanut sauce and stir to coat. Turn heat to low and let cook for about 10 minutes.

  • Prepare sandwiches- place a good amount of vegan ¨pulled pork¨ on the bottom and top with shredded red cabbage, lettuce or any other green and any additional ingredients you like. Enjoy!
