All the classic flavors into one popsicle. Made easily with just a few healthy ingredients, these are great to cool off while enjoying a sweet treat!
You can choose any plant-based milk made in the NutraMilk or a combination such as cashew coconut for the strawberry layer or almond hazelnut for the chocolate layer. Get creative and play around with the flavors. Enjoy!
INGREDIENTS
For popsicles
- 3/4 cup fresh or frozen strawberries or red berries
- 2 tbsp. cacao powder
- 3 tbsp. maple syrup or sweetener of choice*
- 2 cups coconut milk made with the NutraMilk
- 1 cup almond milk made with the NutraMilk
- 1 tbsp. vanilla essence
For Coconut Milk (yields 6 cups)
- 2 cups (160g) of unsweetened dried coconut
- 1 ½ quarts (6 cups) of water
For almond milk
- 1 cup (150g) almonds
- 1 quart (946ml) water
- 1/8 teaspoon Pink Himalayan salt (optional)
INSTRUCTIONS
- Making coconut milk from dehydrated coconut
- Place the unsweetened dried coconut in the NutraMilk container.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Open the container lid and add 1 cup of water. Replace lid.
- Press Butter cycle, set for 1 minute.
- Press Start.
- Repeat this step for each cup of water, until you have used all 6 cups.
- Press Mix (do not change the default time)
- Press Dispense.
- Press Start and open spigot to fill your storage container.
*you can use more or less water depending on how full-bodied you want the milk to be.
For almond Milk
- Start by making fresh almond milk with the NutraMilk:
- Place almonds in the NutraMilk container.
- Press Butter cycle, set for 7 minutes.
- Press Start.
- Add water and replace lid.
- Press Mix (do not change the default Mix time).
- Press Start.
- Press Dispense, open spigot and fill your container with almond milk.
Strawberry layer
- Process berries, sweetener of choice and 1 cup of coconut milk in the NutraMilk or a hand blender.
- Fill popsicle molds 1/3 of the way and freeze for a list 1-2 hours until firm so you can add next layer.
Vanilla layer
- Add vanilla essence to 1 cup of coconut milk and mix.
- Take out popsicle molds out from freezer and fill 2/3 of the way (on top of strawberry filling.
- Freeze for a list 1-2 hours until firm so you can add next layer.
Chocolate layer
- Add cacao powder, sweetener of choice and nut milk of choice together (I used almond). Cashew is delicious as well or use coconut milk again. Process with the NutraMilk or simply whisk until all is well incorporated.
- Take out popsicle molds out from freezer and fill to the top.
- Freeze for about 4 hours or more until firm. Enjoy!
Notes: If you are following a paleo/keto/whole 30 diet- choose appropriate sweetener such as monk fruit sweetener or omit.
