You can make this recipe ahead of time and reheat all week for a quick and healthy breakfast or snack. Made with whole ingredients, all plant-based, including fresh peanut butter and almond milk created in the NutraMilk. Enjoy!
INGREDIENTS
For baked oatmeal
- 2 cups rolled oats
- 1 tsp cinnamon
- 1 tsp baking powder
- ¼ tsp salt
- 2 over ripe bananas
- 1 ½ cups almond milk made with the NutraMilk
- ¼ cup creamy peanut butter made with the NutraMilk
- 2 tbsp. maple syrup
- 1 tbsp. ground flaxseed
- 1 tsp. vanilla extract
For peanut butter
- 2 cups (275g) peanuts (untoasted, unsalted)
- pinch salt (optional)
For almond milk
- 1 cup (150g) almonds
- 6 cups (1.5 quarts) water
- 1/8 teaspoon Pink Himalayan salt (optional)
INSTRUCTIONS
- Start by making fresh almond milk with the NutraMilk:
- Place almonds in the NutraMilk container.
- Press Butter cycle, set for 7 minutes.
- Press Start.
- Add water and replace lid.
- Press Mix (do not change the default Mix time).
- Press Start.
- Press Dispense, open spigot and fill your container with almond milk.
- Making the peanut butter
- Place peanuts in the NutraMilk container.
- Press Butter cycle, set for 2-3 minutes.
- Press Start.
- Open the container lid.
- If necessary, set for an additional 1-2 minutes for a creamier butter.
- Preheat the oven to 375° F. In an 8×11 inch baking dish, combine the oats, cinnamon, baking powder and salt.
- In a large mixing bowl, mash the bananas, then add the almond milk, peanut butter, maple syrup, flaxseed and vanilla extract. Allow the mixture to stand for 5 minutes for the flaxseed to set.
- Pour over the wet ingredients over the oat mixture and stir to combine.
- Bake uncovered in the preheated oven until the top of the oatmeal is golden and the mixture is set, about 30-35 minutes. Remove and allow it to cool for 5 minutes.
- Serve with drizzled peanut butter and banana slices, if desired.
