A hearty breakfast item that will leave you satisfied until lunch time thanks to all the nutrients it has, especially fiber. We stuffed it with a variety of fresh fruit, coconut yogurt and creamy macadamia nut butter made in the NutraMilk.

INGREDIENTS
- 1 sweet potato
- 1 tbsp. macadamia nut butter or chocolate macadamia nut butter made with the NutraMilk.
- 1 tbsp. dairy-free yogurt
- Fruits of choice as topping: berries, cherry, plum, banana, etc.
- Chopped nuts or seeds (topping)
- Sweetener of choice
*Amounts above are for one sweet potato. Multiply amounts according to how many sweet potatoes you will like to make.
For macadamia nut butter
- 2 cups (270g) raw macadamia nuts
INSTRUCTIONS
For macadamia nut butter
- Start by making fresh macadamia nut butter with the NutraMilk:
- Place macadamia nuts in the NutraMilk container.
- Press Butter cycle, set for 4-5 minutes.
- Press Start.
- Open the container lid. If necessary, set for an additional minute for a creamier butter.
- Bake your sweet potatoes:
- Preheat your oven to 375 degrees F.
- Wash your potatoes.
- Line a baking sheet with parchment paper.
- Place potatoes on the parchment paper.
- Using a Knife Poke about 7 holes in the potatoes.
- Bake for 30 minutes, then flip the potatoes and bake for another 30 minutes.
- Slice the potato in half long ways and allow it to cool slightly.
- Gather ingredients: Place 1 tbsp. of yogurt and 1 tbsp. of macadamia nut butter in each potato.
- Top with ingredients of choice. Variety of fruits, chopped nuts, maple syrup, etc.
